All hardneck garlic types produce a flowering spike or flowerhead known as a “scape". If left to grow, they eventually become big purple flowers. Most garlic growers cut the scape off as it grows which encourages enlargement of the garlic bulb and gives us really tasty scapes mid-season.
We love making pesto with scapes! They are also great in salad dressings and sauces, pickled, cut up and added to a stir-fry, thrown on the BBQ, or tempura battered and deep fried!
